涼瓜煎蛋 (Fried Bitter Melon with Eggs)



蛋可以與不同食材配搭, 做出不同的菜式, 今次的涼瓜煎蛋, 用海鹽迫出涼瓜的苦澀味, 色彩豐富之餘, 亦可清熱解毒及幫助消化


食材 (Ingredients)
涼瓜 1個 (1 Bitter melon)
雞蛋 3隻 (3 Eggs)
蒜蓉 適量 (Minced Garlic Appropriate)
海鹽 1湯匙 (Sea Salt 1 tablespoon)

調味料 (Seasonings)
海鹽 適量 (Sea Salt Appropriate)
胡椒粉 適量 (White Pepper Flake Appropriate)

步驟 (Steps)
1 苦瓜洗淨去蒂, 切成小薄片
Rinse bitter melon, remove the seeds and stem, thinly slice

2 將苦瓜片放入容器內, 加入1湯匙海鹽, 用手揉搓苦瓜至其逼出苦汁, 待5分鐘後用清水沖洗淨及瀝乾水份
Place the bitter melon in a container, combine with 1 tablespoon of sea salt. Mix it in well and squeeze, let it sit for 5 minutes before rinsing them in water, drain it


3 雞蛋打散, 加入海鹽及胡椒粉, 用叉子攪勻
Break the eggs into a bowl, beat lightly and season with salt and white pepper


4 燒熱油鑊, 爆香蒜蓉, 加入涼瓜炒2分鐘至軟及乾身, 轉中火及加入蛋液, 煎至金黃, 即成涼瓜煎蛋
Heat up some oil in a frying pan, add garlic to sauté until aromatic, add the sliced melon and stir-fry for 2 minutes till soft and almost dry; reduce to medium heat and add the beaten eggs. Let the egg cook thoroughly. Transfer to a serving dish and serve immediately
